Cozy Curry Pumpkin Soup:
Easy to make and perfect for warming up, especially if you’re feeling under the weather. Full of flavor, this recipe only takes about 5-10 minutes from start to finish. Since cold and flu season is upon us, I switched it up from my usual vegetarian recipe by adding bone broth for extra nutrition and protein. You can easily keep this recipe vegan by using veggie broth instead.
Broth is the quintessential healing food when we’re feeling under the weather, but pumpkin is a wonderful healing food too. Pumpkin is a good source of beta-carotene, which your body turns into Vitamin A. It is also a good source of Vitamin C. Beta-carotene and Vitamin C are both anti-inflammatory and can help boost your immune system. Pumpkin contains Vitamin D, iron, and folate all of which support immune function (Healthline).

I used a Thai Curry Powder from my local spice shop (Oaktown Spice) in this recipe. Thai Curry Paste, or Indian Curry Powder will work as well. I love experimenting with curries because there are so many different kinds. If you are sensitive to spicy food add a little bit of curry at a time. Taste test as you go, until you reach your desired level of heat.
Recipe For Curry Pumpkin Soup
Ingredients:
- 1 Can Organic Pumpkin Purée (look for non-BPA lined cans)
- 13.5 ounces, or 1 Can Organic Full-Fat Unsweetened Coconut Milk (look for the kind with no fillers and non-BPA lined cans)
- 1 Cup Organic Broth of Your Choice (I used organic, free-range chicken bone broth)
- 1 tbsp Oaktown Spice Thai Curry Powder, Thai Curry Paste, or Indian Curry Powder (adjust according to your taste)
- 1/2-1 full tsp Celtic Sea Salt (adjust to taste)
Makes 2-4 Servings.
Instructions:
Combine all ingredients in a medium stock pot and cook until well heated. You can let it simmer for a bit to allow the flavors to deepen, but it’s not necessary. Top with Go Raw Organic Sprouted Pumpkin Seeds and baby arugula, if desired. It’s also wonderful with fresh cilantro and coconut cream drizzle.
